Product notes

Fruit for our 2021 North Coast Cabernet Sauvignon was destemmed and crushed prior to fermentation in stainless steel tanks at a maximum temperature of 90°F. Following fermentation, this wine underwent malolactic fermentation to soften mouthfeel before oak aging.

Production notes

Our 2021 William Hill North Coast Cabernet Sauvignon opens with aromas of dark fruit and baking spice. The softly textured palate is marked by notes of blueberry compote, fig and caramel with subtle hints of vanilla and dried herbs.

Tasting notes

Sourcing grapes throughout the North Coast of California provides our winemaker with an ample array of vineyards from which to craft his blends. Warm summer days, cool fog-laden evenings and ample summer breezes ensure that the fruit gains a long hang-time to ripen slowly and evenly. Harvest in 2021 marked a welcome return to more normal conditions. Ongoing drought conditions reduced crop size slightly, but the weather was ideal and overall vine health and grape development was amazing. Harvest arrived a bit earlier than normal and the fruit arrived in pristine condition.
